What is Cheese Tea?
The cheese tea trend, in fact, originated from the home of bubble tea — Taiwan. Tea and coffee shops in southern Taiwan began serving early versions of cheese tea and coffee a decade or two ago, but the trend really took off in mainland China after Hey Tea opened its first store in southern Guangdong province in 2012.
A young twenty-something-year-old entrepreneur named Nie Yunchen expanded his tea shops to Shanghai and Beijing, and has begun to open in Hong Kong, Singapore, and smaller cities across China. A competitor to Hey Tea, Gong Cha, has opened outlets in Australia, New Zealand, and Atlanta, Georgia.
You won’t find cheddar or gruyere in this drink but rather a light, feathery concoction of cream cheese, heavy cream, sugar, and a dash of salt.
“Cheese” is often used as general term for dairy in China, and Chinese purveyors of the drink have coined its English name “cheese tea,” not realizing that most westerners might associate cheese with savory edibles rather than sweet drinks.
The more literal translation of the drink is milk cap tea.
